I know.  We’ve all had prosciutto and melon so many times before. Me too. It’s one of my go-tos for an appetizer.  But allow me to pay homage to the inventive chef at Flora in Oakland, CA who tapped into the sweet beauty of perfectly ripe melons – three different kinds! Clothe them in the tangiest, saltiest and creamiest of prosciuttos, the freshest of olive oils, and cracked pepper and salt. Then, the kicker –  a true California twist on the classic. Add a dash of apricot liqueur, yogurt, poppy seeds and fresh mint. I don’t know if this combo is what Italy intended when they invented the original, but I feel I’ve just experienced the dish for the first time.  Paired with a crisp Sauvignon Blanc from Sonoma and it is beyond bellisimo!
