I spent some time living in Paris and I had a cheese guy. He had a little stall and occasionally, amongst the stinky and delicious French cheeses, he would have the freshest burrata. I ended up eating more cheese in France than any other food group (and yes, I am counting cheese as a food group). This raised my fromage expectations so high that they could not be met once I returned to the states. Until this burrata dish! By god, who thought baby kale would make a salad taste better? The restaurant, Nightingale, called it a “Caesar Salad” but the only thing “caesar-y” about it was the anchovy dressing. It had baby kale, delicious lardons and a mini mountain of parmesan sprinkled on top. And then, the showstopper. The gooey burrata. I cut into the cheese and the creamy center slowly spilled out over the rest of the salad. The best dressing possible. I’m drooling just thinking about it. Hopefully it’ll still be on the menu when I go back. Because I’m definitely going back.
