On these early days of spring, with a slight chill still in the air, I was lucky enough to head into Vic's, sit at the bar and make the wise decision to order the fusilli bolognese. Chef Hillary Sterling seems to be almost daring you with her authentic Italian cuisine. Nothing she does is for the lighthearted. She's pushing the envelope and it's completely memorable. I've had bolognese a million times before, but never featuring homemade, extra thick, cooked-to-perfection fusilli. The sauce: rich, layers of nuanced flavor, spicy and bold. Even the garnish of fennel fronds meant something . No accidents here. This is a well coordinated assault on the senses in the best sort of way. I had no intention of drinking wine, but the dish just called out for a big bold red. Even though there was still plenty of work to be done this day I didn't refuse. Chef would approve...I'm sure.
