"Would it be possible to put a couple fried eggs on those and add some of that salsa Verde?" I ask the chef, peeking over the tiny counter into an even smaller kitchen. The chef eyeballs me. His line cook looks to him. The chef looks once more towards me then nods. It wasn't like he hadn't thought of it, or that he was impressed that I had. It was just simple appreciation, knowing it was going to be delicious.

Okay, so fried eggs are good on anything but the difference here is – and it's monumental – these are the best tamales I've ever had (I mean in a restaurant). I grew up on tamales, lovingly prepared by a team of truly heavy weight home cooks, mom and BOTH grandmas!" So these? Fluffy, delicate, seasoned perfectly, filled with a complex and truly succulent mole sauce . But really, the game changer is the masa. This guy is grinding his own maze! In this sliver of a restaurant, corn imported from Mexico! The results are heaven, and by heaven, I mean the place that you hope against all odds you wind up in. The atmosphere is friendly; they want you to come into their home and enjoy your meal. It's not a put on, it's just who they are. They're Mexican. And they make me very proud to be a part of their tribe.
