His line cook looks to him. The chef looks once more towards me then nods. It wasn't like he hadn't thought of it, or that he was impressed that I had. It was just simple appreciation, knowing it was going to be delicious.
Okay, so fried eggs are good on anything but the difference here is – and it's monumental – these are the best tamales I've ever had (I mean in a restaurant). I grew up on tamales, lovingly prepared by a team of truly heavy weight home cooks, mom and BOTH grandmas!" So these? Fluffy, delicate, seasoned perfectly, filled with a complex and truly succulent mole sauce . But really, the game changer is the masa. This guy is grinding his own maze! In this sliver of a restaurant, corn imported from Mexico! The results are heaven, and by heaven, I mean the place that you hope against all odds you wind up in. The atmosphere is friendly; they want you to come into their home and enjoy your meal. It's not a put on, it's just who they are. They're Mexican. And they make me very proud to be a part of their tribe.
