Belga is known for a variety of traditional Belgian dishes, such as mussels with frites and mayo, all served in appealing copper pots. I broke tradition and ordered the lunch special that day – cod – the fish that gets no respect. However, it is truly elevated to star status when in the hands of a talented chef who can take simple farm-fresh ingredients like slivered carrots, mushrooms and fennel (my best guess), add a lime-infused cream sauce, parsley and pea shoots to deliver such a gourmet delight. The fish was perfectly cooked – a bit crispy on top and satiny inside. A heavenly and satisfying protein lunch, all the better before boarding a food-less transcontinental flight home.
