Golden, CO (the historical mining town & home to the beer bottling behemoth, Coors) has been going through a sophistication boom in recent years, and Abejas is just one fine example of this renaissance. An absolutely divine dish on their current lunch menu is the Alamosa Striped Bass. The fish was cooked to perfection and surrounded with a wonderful complement of heirloom green beans, house-made sausage, corona beans, cherry tomatoes & pickled shallots.
Not only was my lunch entrée amazing, the Carrot & Walnut Cake was wonderful too— I know, who eats like this??? Believe me, I usually don't but a friend suggested dessert and I'm glad he did. The firm but moist cake was topped with creme fraiche frosting & pistachio nuts. A small dollop of cinnamon ice cream balanced the cake so perfectly that I wish there was a bit more ice cream, but honestly a tiny nit in an otherwise heavenly meal.
