I never realized that all the guacamole I'd ever eaten in my life was naked—until I discovered the fully-dressed version at Xoco in Chicago. This fast-casual restaurant, serving Rick Bayless’ inventive twist on Mexican street food has crowds queuing up for breakfast, lunch and dinner.
Most people come for the mouthwatering, grilled torta sandwiches, served on Mexican sourdough-like bolillo bread. Perhaps they’ve been lured in by the smell of the rich, hot chocolate wafting out the doors, or the sight of churros being hand dipped in a sweet hazelnut or pistachio glaze.
But what really impressed me was their Fully Dressed Guacamole, assembled on the spot at their fresh guacamole bar. Dressing up the fresh avocado is a divinely inventive mix of spicy roasted poblano (mild chili pepper), chicarron (crispy fried pork skin), grilled onion, local MightyVine tomatoes, freshly grated cheese, pumpkin seeds and smoky bacon. Served with the flakiest, just-made tortillas and two types of homemade salsa, this dish will rev up all your taste buds.
