While Colorado is not necessarily known as the best fried chicken state in the country, I've found a few that really rock "the house"— or should I say "the "coop." Case in point, the fried chicken at The Post Brewing Company (and their expanding sister restaurants: The Post Chicken & Beer) is one of my favorite local recipes. The all-natural chicken is brined for hours, takes a few laps in buttermilk, and is dunked in seasoned gluten-free flour— that's right, this bird is 100% GF! They then cook it in a pressure fryer that keeps the chicken nice 'n' juicy with a crispy crust, and finally hit it with their special spicy seasoning— oh yeah, I love it hot right from the kitchen, and even better the next day out of the fridge.

And if you want to take a stab at eating something on the healthier side, try "The Salad." While it has about a basic name as you can get, this is no bowl of iceberg. It is shock-chockingly full of romaine & arugula lettuces, boiled egg, apple, cucumber, cherry tomatoes, blue cheese, pumpkin seeds, bacon, big ‘ol croutons, and tossed in a house vinaigrette. Small, Big and Bigger are the perfectly appropriate names of The Salad sizes.

One last note about The Post Brewing Company (Lafayette) vs. The Post Chicken & Beer (Longmont & coming soon in the Fall of 2016 to Denver). While all the menus are extremely similar featuring the wonderful aforementioned fried chicken and The Post craft beers, the brewing facilities are only located at The Post Brewing Company where Brewermaster & Partner, Bryan Selders works his magic on his GABF award-winning beers.
