A short walk from my house in South Park Slope Brooklyn leads me to the few blocks that separate it and Sunset Park – 5th ave, the 20's – and it is here I found my dream diner, Pablito's, that re-creates my great aunts and uncles' Chorizo con Huevos. Uncle Fred always had it sitting there in a cast-iron pot right along side a pan of refried beans.
There's a cheerful fat man in the kitchen cooking away and lovely Mexican-American waitresses working very hard, that seem genuinely concerned with making you happy. Right when the wait seems a bit too long the plate arrives. It's a simple one , smelling of fresh warm tortillas, the beans seeping over into the chorizo and egg mix, cozied up to the sliced avocado and the Molcajete full of amazing salsa Verde. A tortilla in my left hand, I do as the French do with their knives, pushing the chorizo onto my fork, adding more salsa, mixing in the beans. A slow steady movement. So simple and so deeply satisfying. Good food always brings us home.
