Cheese Enchilada w/Pork Green Chili

Every time I go to Taqueria del Sol, I'm astounded that for $3.39 I am having a dish from a James Beard finalist (actually, multiple times finalist). The pork green chili sauce is a thing of beauty, flavors that taste as though the chilis were just harvested (no comment about the pig), and just the right amount of heat to remind you of, but not disguise, what you are eating. Charring - like everything else, just the right amount - adds texture and flavor to this very simple dish. Supplement with chips & salsa (smoky, hot or traditional, the latter being the biggest surprise because it is so much more flavorful, complex and balanced than anywhere else) and a margarita, and you are looking at a truly perfect lunch.
