And let me tell you about THAT dish that convinced me so! Kao Soi! Kao Soi is a Northern-style red curry dish that shows off Chef Pu’s range as a Thai food master. Presented in a large soup bowl, Kao Soi is a towering shock of crispy noodles, concealing what lingers beneath. Marinated and braised chicken thighs feature in this savory red curry-enveloped flat egg noodle dish. The terra-cotta broth is straight umami– incredibly savory, medium heat with a hint of sweetness, all glands firing at once! Crispy noodles on top, flat noodles covered in a warm broth below, with mustard green pickle, shallots, lime and dried chili oil on the side. This is Kao Soi.
