In a town overflowing with fresh and delicious craft beer, Ft. Collins’ food scene is a bit on the down-low. Referred to Café de Bangkok by Rafi, our favorite mixologist at Social, a proper cocktail bar in The Fort, Bangkok is a top pick in northern Colorado. With a hometown vibe, appreciation for the best of all types of cuisine will land you in the weird and wonderful world of Café de Bangkok. This Thai eatery, popular with Asian-food lovers of both the local and foreign student-type alike, tucked into a nondescript strip mall west of campus, Café de Bangkok serves dishes worthy of a dedicated trek.

And let me tell you about THAT dish that convinced me so! Kao Soi! Kao Soi is a Northern-style red curry dish that shows off Chef Pu’s range as a Thai food master. Presented in a large soup bowl, Kao Soi is a towering shock of crispy noodles, concealing what lingers beneath. Marinated and braised chicken thighs feature in this savory red curry-enveloped flat egg noodle dish. The terra-cotta broth is straight umami– incredibly savory, medium heat with a hint of sweetness, all glands firing at once! Crispy noodles on top, flat noodles covered in a warm broth below, with mustard green pickle, shallots, lime and dried chili oil on the side. This is Kao Soi.

Don’t let the wait (to be seated, to be served) or lack of alcoholic beverages deter you, just arrive prepared. Stop by Social for a perfectly prepared libation or two, bring a book or a good friend, then bike your way across town, over the beautiful campus and surrender yourself to the tastes and aromas of bustling Bangkok.
