Cravings. I get cravings. I discovered the mushroom ragout a few years ago at The Swiss Hotel on the Square in Sonoma and never order much else. Technically, it’s an appetizer. They actually took it off the lunch menu (until the hew & cry from regulars like me forced the chef to bring it back).  It’s sublimely subtle comfort food with the most satiny sauce. The mushrooms dance atop the grilled polenta triangles. A final flourish of dry, salty parmesan and parsley brings it all together.  Pair it with a fruity Pinot Gris and you’re one happy camper. On this visit I added a chophouse wedge salad. Even though I swore I wouldn’t eat pork this year, I did succumb to the crispy bacon bits piled on top. Crunchy radishes, minced onion, and blue cheese dressing dribble down the iceberg lettuce.  Divine.
