I have never had the energy to buy all the necessary ingredients - veal, beef, pork, etc. - to make a classic bolognese. Nor do I have the skill to make my own tagliatelle. And given that I live in Atlanta that’s a good thing, because however hard I might try, I would not be able to replicate the sumptuous versions of these classic dishes that Storico Fresco serves at their restaurant. The results seduced retail patrons and chefs alike, the latter who would feature them in the city’s best restaurants. Their Tagliatelle Bolognese is such a dish; the pasta, rich and smooth in a way that only really fresh pasta can be. The sauce is that rarity that enables all the flavors and textures - meat, tomatoes, herbs, cheese - to play together, and look good doing so.
